Exploring the roasting spectrum of Vietnamese Altura Robusta continues to reveal surprising versatility. Moving away from the extreme "Ultra-Dark" profile, we have dialed in a "Full City" roast. This level balances the signature Robusta body with a more nuanced development of the bean's intrinsic characteristics.

Sensory Profile

This roast profile strikes a balance between comfort and complexity, has the flora notes of the red beans. The profile is characterized by a creamy mouthfeel, heavy body, and notes of roasted peanuts and bakers' cocoa, and the notes of the red beans. Maybe because it is a light roast, the roast level which is often not used for the Robusta type of beans. The sweetness is less than that of Arabica beans. It remains profoundly comforting, yet cleaner and more approachable for daily consumption.

Special Notes on the Extraction:

The Robusta Edge: Because Robusta typically has almost double the chlorogenic acid of Arabica, roasting it light is actually quite bold. It can be intensely "grassy" if underdone, but when we land on that fruit/red bean spot, we are showing that 100% Robusta espresso can be taken as a specialty-grade experience, not just a filler.

When doing the extraction with MeeBaa S01A-9BAR,  for this beans, the required thermal and pressure are set for the general light roast conditions, temperature at 93C to 95C to start with and the extraction pressure is near the 9 bars region. It is required for managing the extraction of those lighter-roast compounds. Usually, lighter roasts are harder to extract because the beans are denser—we did that with a higher pressure or temperature to get those sugars out.

Summary: This roast achieved a 16.8% weight loss from an input of 99.6g to an output of 82.8g. The result is a balanced, Full City profile characterized by creamy mouthfeel and notes of roasted peanuts and cocoa, demonstrating the flexibility of Vietnamese Altura Robusta when roasted to a moderate level.
