The Boundaries of Espresso: Comparing Ultra-Light and Ultra-Dark Profiles

In the world of home espresso, the "medium roast" or “medium-dark roast” is often held up as the right standard—a safe harbor of balanced sweetness, full bodied and manageable acidity. But for those of us who like to taste espresso as a variety, as a wonder on what it is like. This post shares a real personal experience  at the edges of the spectrum. Recently, this morning, we just had a chance to try out the flavors between two ends of the coffee: the latte from ultra-light roast beans and the latte from ultra-dark roast beans.

Late in the morning, we picked two freshly roasted beans to make espresso—specifically as a latte, two lattes. These two profiles represent the boundaries of what is possible in manual espresso extraction - two types of beans, two types of roast levels.

Espresso Flavor Comparison: The Latte Experience

With a bit of curiosity, we moved directly into the flavor test.  

  1. The first cup (two people shared) is an ultra-dark roast, made from the Vietnamese Robusta beans. 
  2. The second cup (two people shared), is an ultra-light roast, made from Brazilian Cerrado Arabica beans.

The Ultra-Light Roast, Latte


Started with the last cup, the second one. The ultra-light roast latte is a curiosity pursuit. The whole beans appear to be like a common light roast level. The roast color is almost exactly like the Kirkland Ethiopia Light Roast level. The result as latte: the overall taste of the cup is good, like 4.1 out of 5. What else? It has some very noticeable natural flora acidic notes, very clear. It also comes with a tiny bit of grassy taste. The roast is somewhat underdeveloped during the last roasting phase.  The body feel is slightly less than the regular medium roast latte, but only noticeable if you are really making an effort seeking out the difference otherwise, it is still the espresso full body taste. The drink is pretty good, maybe the beans are just freshly roasted. Another thing is that the extraction temperature is ranged above 93C down to 91C over the extraction period.

Now back to the first cup, the ultra-dark roast, the beans are oily dark but not black. The color is obviously darker than the Kirkland Signature Colombian Supremo Medium roast color. Judging by the color, our first reaction is that: should we try these beans? The beans are Vietnamese Robusta.  It has a thick crema but not like the crazy yellow crema, just an obvious layer of crema.   The result is a latte that is profoundly comforting, very aromatic, yes some noticeable bitterness, a feel of the "burnt", that comes from the “ultra-dark” level of roasting, characterized by deep cocoa and nut profiles that feel substantial and enduring on the palate. The overall taste of the cup, 4.0 out of 5.0. It is still an enjoyable cup.

Conclusion: No Single "Best"

The conclusion of this morning’s experience is that: there is no "best" level. The ultra-light roast made into latte, yes very much drinkable. It is a clearly fresh drink. The ultra-dark roast (Robusta) made into latte, yes also very much drinkable. It is a really tasty drink. It was a surprise to us. 

The beauty of manual espresso, particularly when using high-precision equipment capable of handling wide ranges of extraction. Most of the espresso machine should be able to handle the extremes here, however to be safe, we just take the MeeBaa S01A-9Bar to do the job.
