When we make espresso for a latte, most people assume hitting 9 bar pressure is the magic number for a perfect shot. But real-world espresso is far more complex than a gauge reading. To achieve a cup that complements milk—balancing sweetness, body, and crema without bitterness—we have to look beyond peak pressure and focus on the mechanics of extraction.

The Reality of the Puck

Grind size, dose, and puck preparation dictate flow resistance. While many strive for the perfect grind, real-world variables often lead to imperfections. As the grind size is fine and the pressure is near the 9 bars, channeling is the most common culprit; even a seemingly well-tamped puck often contains micro-paths where water shortcuts, leading to an uneven, thin, or sour extraction. While some might overlook these subtleties, a sensitive palate will immediately notice the difference between a clean, balanced shot and one riddled with micro-channeling.

When the puck is far from perfect, such as variables in the puck level and the loosen spots, weak spots in the puck, with that you need a way to rescue the shot.
